i’m posting my pesto recipe in honor of the bunch of basil in this month’s basket from the csa. you can view the full contents of the basket this month at whitney’s blog. i use my food processor to make this, but i’m sure you could use a blender too. if you aren’t getting a basket this month, you can still buy fresh basil at the river market this weekend. and BLACKBERRIES are here! i would talk more about them, but they deserve their own post.
(for about 1 lb of pasta)
2 cups fresh basil
1/2 cup good olive oil
1/2 cup grated parmesean cheese (i buy the big hunk and grate it myself…it tastes better)
1/2 cup pine nuts or walnuts (i use walnuts…cheaper)
2 cloves garlic
1 teaspoon coarse kosher salt
Blend all ingredients together. Use immediately or freeze.
i love this pesto tossed with whole wheat penne pasta, fresh tomatoes and goat cheese. enjoy!
