Chocolate Mint Creme Sandwich Cookies
Last Saturday, my pal Bailey and I got together to do a little baking.
Bailey is one of my cupcake sidekicks and it was super fun to do something a little more laid back than cranking out hundreds of cupcakes.
We made a few dozen of these very special cookies, a new recipe, which we definitely think is a keeper.
These are super thin chocolate cookies with peppermint frosting in the middle.
We made our frosting green, but you could totally do pink for your valentine!
Chocolate Mint Crème Sandwich Cookies
Ingredients for Cookies:
2 ½ cups flour
½ cup cocoa powder
½ teaspoon salt
1 cup butter, at room temperature
1 cup sugar
1 egg
½ teaspoon vanilla
½ teaspoon peppermint extract
Ingredients for Mint Crème Filling:
6 tablespoons butter, at room temperature
3 cups powdered sugar
¼ cup milk
¼ teaspoon peppermint extract
Few drops green food coloring
Directions for Cookies:
Cream butter and sugar. Add egg, vanilla and peppermint.
Sift dry ingredients together and add to batter.
Mix until dough holds together.
Mold dough into two flat rounds. Wrap in plastic and refrigerate for 30 minutes.
Roll out dough and cut fluted rounds.
Bake cookies for 12 minutes at 350 degrees.
Allow to cool before spreading with crème and forming sandwiches.
(I found that the cookies were much easier to fill with crème after they had been frozen for a little while.)
Directions for Mint Crème:
Add powdered sugar to softened butter.
Mix in peppermint extract, milk and food coloring.
Spread between cookies.
