I made a pan of gingerbread on our first snow day at home and we ate it so fast that I decided to make another one the next day.

It was gone even quicker than the first one.

It is crazy delicious.  Lots of ginger and super comforting molasses flavor.

Gingerbread

Ingredients:

1 stick butter (1/2 cup)

1/2 cup brown sugar

1/3 cup blackstrap molasses

2 tablespoons honey

1 teaspoon vanilla

1 egg

1/4 cup buttermilk

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon ground ginger or 1/4 cup chopped fresh ginger

1 1/2 cups flour

Directions:

Mix flour, baking soda, ginger and salt together

Cream butter and sugar.

Add molasses, honey, vanilla and egg.  Mix well.

Alternate adding dry ingredients with buttermilk.  End with flour.

Stir until just mixed.

Pour into greased 8 inch round pan.

Bake at 350 degrees for 35-40 minutes.

Serve warm.
